2 Cloves Garlic, diced 1 Bell Pepper, diced 1 Small Onion, diced 2 T. Parsley 2 Bay Leaves Salt & Pepper, to taste 16 oz Stewed Tomatoes 1 Quart Chicken Broth 1 1/2 Tsp Old Bay Seasoning 1 tsp Crab Boil 1/2 Cup All-Purpose Flour 1 Stick of Butter 2 lbs. Shrimp 1 Pint Crab Meat: I use whatever we catch off my dock. Fresh is Best! 1 Package Sausage Links, cut up small 2 Cups diced Chicken Meat; I used the thighs in mine 1 Quart Okra, cut and de-slimed Instructions: In skillet, melt butter: add garlic, pepper, onion, and flour. Stir until brown over medium heat. Add Chicken broth and stir until mixed. Add parsley, bay leaves, Old Bay, salt and pepper. Simmer. In separate skillet, cook sliced okra in small amount of oil until all slime is gone, then add to roux. Heat shrimp, sausage, and chicken until water is cooked out of shrimp. (light pink). Add to roux. Let simmer 1 hour. Pour of rice to serve.

1/29/2025 0 Comments MawMaw's Chocolate Pie![]() Ingredients 6 T. Flour 1 1/2 Cups Sugar 3 T. Cocoa 3 Egg Yolks (beaten) 1 1/2 Cups Milk 1 Tsp Vanilla 3 T. Butter 1 Uncooked Pie Shell Meringue: 3 Egg Whites 4 T. Sugar 1/4 Tsp Cream of Tartar (optional) Mix flour, sugar and cocoa together. Add beaten egg yolks, vanilla, butter and milk. Cook in a double boiler until thick. (I use a nonstick pot on med heat stirring constantly until it thicks) I am a Rebel. Pour into a baked pie shell, yes you will need to bake that uncooked pie shell. I always put a piece of plastic wrap on top of the filling, if I still have to prepare the meringue. I always try to have the meringue ready and waiting, but this is a great tip if you don't. Meringue: Beat egg whites until stiff, (definition of stiff: Hard, erect) add sugar and cream of tartar. Spread over pie filling making sure it touches the pie shell, then bake at 275 degrees for 12-15 minutes. Everyone's oven is a little different. Ladies or Gentlemen it pays to get to know your oven.
