Mater' Pie

What can I say, "It's the South!"

Ingredients
 5 Roma Tomatoes, red or yellow
1 Ready to Bake Deep Dish Pie Crust
1/2 Cup Mayonnaise
1/2 Cup Mozzarella Cheese
1 Cup Mild Cheddar Shredded
1/2 Parmesan Cheese
Fresh Basil Cut Small
1/2 Pound Ground Beef or Italian Sausage.  My favorite is Beef
1 Small, Sweet Onion chopped
1 Clove of Garlic minced
Salt and Pepper to taste
Sugar to taste

Instructions

Let's start by preheating oven to 375 degrees and prebaking that pie shell till golden brown. Do not forget to poke a few fork holes in that crust before baking.  Set aside. Leave oven on and turn down to 350 degrees.

On a paper towel, slice the tomatoes into 1/4-inch slices and lay out to get as much moisture as possible out of them.

Cook your ground beef, onions, garlic, salt, and pepper in a skillet until done and drain excess fat.  I try to use the leanest beef for less fat.

In a bowl mix together mayonnaise, cheeses, salt, pepper, a little sugar to taste. (I usually put a tablespoon for my own pleasure)

Now let's put that pie together, in the bottom of the crust put a layer of the tomatoes, then a layer of the beef, then repeat tomatoes and beef until gone.  After that process add a few bits on Fresh Basil on top. Then put the Cheese mixture and garnish with more basil.

Bake for 30 to 40 minutes and let sit for 15-20 minutes before slicing. (this part is a must)

hint:  It is also really good with a dash of Louisiana Hot Sauce!
