MawMaw's Chocolate Pie

Ingredients
6 T. Flour
1 1/2 Cups Sugar
3 T. Cocoa
3 Egg Yolks (beaten)
1 1/2 Cups Milk
1 Tsp Vanilla
3 T. Butter
1 Uncooked Pie Shell


Meringue:
3 Egg Whites
4 T. Sugar

1/4 Tsp Cream of Tartar (optional)



Mix flour, sugar and cocoa together.  Add beaten egg yolks, vanilla, butter and milk.  Cook in a double boiler until thick.  (I use a nonstick pot on med heat stirring constantly until it thicks) I am a Rebel.
Pour into a baked pie shell, yes you will need to bake that uncooked pie shell.  I always put a piece of plastic wrap on top of the filling, if I still have to prepare the meringue.  I always try to have the meringue ready and waiting, but this is a great tip if you don't. 

Meringue: Beat egg whites until stiff, (definition of stiff: Hard, erect) add sugar and cream of tartar.  Spread over pie filling making sure it touches the pie shell, then bake at 275 degrees for 12-15 minutes. Everyone's oven is a little different.  Ladies or Gentlemen it pays to get to know your oven.
